Sunshine Sauce
Inspired by the Glory Bowl dressing from Fresh Tracks Café in Nelson, BC, this rich and tangy dressing conjures up memories of true hippy Kootenay living at its finest. Turmeric, the anti-inflammatory superfood, shines in this dressing, a must-have recipe for any salad or grain bowl, as most store bought dressings are loaded with sugar, preservatives, and GMO oils like canola or soy. The apple cider vinegar helps to stimulate digestion, and the nutritional yeast packs a B vitamin punch.
PREP: 5 minutes YIELD:2 Cups

INGREDIENTS
1/3 Cup Soy Sauce, Tamari, Braggs, or Coconut Aminos
1/3 Cup Apple cider vinegar
2 Garlic cloves, grated
1 Tablespoon Ginger root, grated
1 teaspoon Turmeric root, grated
2 tablespoons Sesame tahini
1/2 Cup Nutritional yeast flakes
1/4 Cup Water
1 1/2 Cups Avocado oil, or other neutral oil
DIRECTIONS
In blender, purée nutritional yeast flakes, water, tamari, vinegar, garlic, ginger, turmeric, and tahini.
With a blender on high, add oil in slow, steady stream. Blend until smooth. Cover and refrigerate for up to 3 weeks.
