Not all miso is created equal.

1/4 cup miso paste
1 fat garlic clove, crushed
1/2 cup water or broth
1/4 cup oil (olive, avocado, or grape-seed)
1 Tbsp apple cider vinegar
1 Tbsp honey or maple syrup
1/2 tsp ginger
1/4 tsp arrowroot powder/ cornstarch
pinch chilly flakes (optional)
Add all ingredients to a blender and puree on high until smooth.
Pour gravy mix into a saucepan and heat on high until bubbles just start to form at the edges to activate arrowroot/cornstarch.
Fill a gravy boat and spill over roasted roots, sprouted chickpeas, shredded raw carrots, pumpkin seeds and farro.
