Not all miso is created equal. 


Look for organic refrigerated varieties for the best flavor profile. Amano Foods out of Richmond BC, family run since 1937, specializes in high quality organic traditionally fermented miso and tamari.

Ingredients

1/4 cup miso paste

1 fat garlic clove, crushed

1/2 cup water or broth

1/4 cup oil (olive, avocado, or grape-seed) 

1 Tbsp apple cider vinegar 

1 Tbsp honey or maple syrup

1/2 tsp ginger

1/4 tsp arrowroot powder/ cornstarch 

pinch chilly flakes (optional)


Direction

  1. Add all ingredients to a blender and puree on high until smooth. 

  2. Pour gravy mix into a saucepan and heat on high until bubbles just start to form at the edges to activate arrowroot/cornstarch. 

  3. Fill a gravy boat and spill over roasted roots, sprouted chickpeas, shredded raw carrots, pumpkin seeds and farro.
